Bacon Jam is Just the Best Condiment Ever!

I am just going to say it; Bacon Jam is just the best condiment ever! Put it on your burger. Place it on your charcuterie plate. Are you an Avocado Toast person? Next time mix in some sweet and savory bacon jam as a tasty treat for breakfast. So good!

What is Bacon Jam?

Bacon jam is basically a relish where the bacon is slowly rendered and combined with a variety of other ingredients such as onions, some type of vinegar, and some type of sugar. In my version, I am using apple cider vinegar, purple onions, maple syrup, bourbon, and brown sugar.

For additional flavor, I slowly caramelized the onion and added some mustard seed. Those ingredients will work with the apple cider vinegar to help offset the sweetness from the brown sugar and maple syrup. When you add the smokiness from the bacon and the bourbon, you end up with a bacon jam that is just the best condiment ever.

Ingredients

  • 1 1/2 lbs 1 1/2 Bacon, diced into small cubes

  • 1 Large 1 Purple onion, small dice

  • 2 2 Shallots, small dice

  • 2 Cups 2 Apple cider vinegar

  • 4 Tbl 4 Mustard seed

  • 2 Cups 2 Brown sugar

  • 2 Tbl 2 Maple syrup

  • 1 Cup 1 Bourbon

  • 1/2 Cup 1/2 Water

Directions

  • Cut up your bacon into small dice. Add the bacon to your Dutch oven or large skillet and cook for 20 to 30 minutes over medium heat to render the fat. Cook about 80% complete. The bacon will finish cooking when all the ingredients are combined and cooked together.
  • Remove the bacon from the pan and set it aside. Remove all the rendered bacon fat except for 2 TBL.
  • Add onions and shallots to the pan and cook over medium heat until they have started to brown. Approximately 15 to 20 minutes.
  • Add the bacon and remaining ingredients into the dutch oven. Stir and combine. Cover and cook for 20 minutes.
  • Remove cover and cook over medium-low heat for approximately 20 minutes until it reduces to a jam-like consistency.
  • Time to top off your dish with your Bacon Jam. Enjoy!
