The Best Sweet and Spicy, Perfectly Crunchy Wontons!

Making my Perfectly Crunchy Wontons always seems to be the right dish to take care of my cravings for something fried, sweet, and spicy!

My Wonton and my Version of a Sweet, Spicy Sauce

I have been having cravings these days for Asian-inspired dim sum. That is primarily due to a great cooking class that I had with Chef Paul Donnelly out of New York. Check out my recipe for dumplings developed from my class here!

Whether you are looking for an appetizer for a party or you need some munchies for your next sports event, these perfectly crunchy wontons are the perfect answer to what you are looking for. They are not hard to make.

What Kind of Sauce Should I Use?

The sauce that accompanies the wontons is that same sauce you might find at your favorite Thai restaurant. Mae ploy is a sweet-spicy sauce that is typically used for these types of wontons. This sauce will definitely work in a pinch when you get your cravings.

However, you might as well make your own sweet and spicy chili sauce instead of letting a bottle sit in your pantry forever! It is so easy!

What Kind of Filling Should I Use?

The main ingredient that I am using today is ground pork. You can add some chopped shrimp to the recipe and that would be fantastic! Shiitake mushrooms chopped fine would be another great addition. The use of white pepper gives your wonton a little kick. Cut back a little bit if you are not much of a pepper fan.

If you are looking for a more sweet wonton, you could fill your wonton with cream cheese and a little sugar. Making appetizers using your homemade wontons is open to experimentation allowing you to try different combinations. Just have fun!

Ingredients

  • 12 – 14 oz package 12 – 14 Square wonton wrappers

  • Wonton Filling
  • 1 lb 1 Ground pork

  • 2 Tbl 2 Garlic, chopped fine

  • 2 Tbl 2 Fish sauce

  • 2 Tbl 2 Ginger

  • 2 Tbl 2 Oyster sauce

  • 2 tsp 2 Sugar

  • 1 tsp 1 White pepper

  • 2 2 Small green onions, chopped fine

  • 1 1/2 tsp 1 1/2 Sesame oil

  • 2 tsp 2 Cornstarch

  • Sweet Spicy Sauce
  • 1 cup 1 Water

  • 2/3 cup 2/3 Sugar

  • 1 Tbl 1 Honey

  • 1/3 cup 1/3 Rice vinegar

  • 3 Tbl 3 Sambal Olek

  • 1 Tbl 1 Garlic, finely chopped

  • 1/2 tsp 1/2 Salt

Directions

  • Making Your Wontons
  • Combine all you wonton filling ingredients in a large bowl and mix well.
  • Place a wonton wrapper on a clean surface. Place a teaspoon of the filling onto your wrapper. Dip your fingertip into water and brush the two top edges of the wonton.
  • Fold the wonton into a triangle and press to close. Make sure you get all the air out of the wonton.
  • Wet the two points of the wonton and press together to finish.

  • Cooking Your Wontons
  • Add a couple of inches of vegetable/canola oil to your pan (I used a wok that I filled up approximately 1/3.)
  • Heat your oil to approximately 320°. Add some wontons to the oil. Cook until golden brown. Flip the wontons occasionally to make sure they are evenly cooked.
  • Use a spider strainer to remove the wontons from the oil. Place on a tray to drain.
  • Serve and enjoy with our perfect sweet, spicy sauce!
  • Note: Do not overheat your oil. You do not want to over-brown your wontons before the inside is cooked completely.
  • Sweet Spice Sauce
  • Add all the ingredients for the sauce into a saucepan. Stir and combine well.
  • Bring the sauce to a boil. Reduce the heat to a simmer. Cook until you have reduced the sauce to your desired consistency. The sauce should be a little syrupy. Add more sambal if you like it a little more spicy!

Notes

  • Freeze your wontons before you fry them if you would like to use them at a later time.
