Another Great Short Rib Recipe! Coffee, Maple, Bourbon Glaze Over a Braised Short Rib, and Hash Brown Waffle.

Braised short ribs…coffee, maple, and bourbon…hash brown waffle. I am thinking that the title of this blog alone has to spur some interest in checking out exactly what the heck this recipe is all about.

You just can’t find a more tender or more flavorful cut of meat than a short rib that has been braised low and slow for a couple of hours. Braised short ribs make the perfect meal as it can turn a tough cut of meat into a fork-tender masterpiece.

Of course you need the perfect sides to accompany the short ribs.

Those options would probably be the first someone would select as a side with anything that includes coffee, maple, and bourbon. Not this time folks! Let’s go with hash brown waffles.

Hash Brown Waffle

My friends will all tell you that I am not a big fan of mashed potatoes. However, I can easily be convinced to go after any kind of potato that has a crunch to it. Hash browns are great, especially when they have that perfect crispy texture. The waffle maker cooks the waffle from both sides and also does a great job of removing the moisture from the hash brown.

Making the perfect sauce was my next step. I used my braising liquid and added coffee, maple syrup, and bourbon. The flavor was amazing. A little bitterness from the coffee and sweetness from the maple syrup and bourbon.

I didn’t just stop there. I sautéed some sliced onions very slowly just like I would if I was making a french onion soup.

The hash brown waffle was a perfect vehicle for the short rib and the sautéed onions. A bit of the short rib, the waffle, and the onions provided the perfect bite. The waffle stayed crispy even after drizzling the sauce over the short ribs.

The Coffee, Maple, and Bourbon sauce drizzled over the short rib and waffle.

If you are looking for something a little different, this short rib recipe will be very satisfying and will provide tons of flavor. Expect the family to come back for seconds and thirds!

Maple Bourbon Braised Short Rib On a Hash Brown Waffle

Ingredients

  • Short Ribs Braise
  • 3 Lbs 3 Short rib, boneless

  • 2 Tbl 2 Tomato paste

  • 2 2 Carrots, rough chop

  • 2 Stalks 2 Celery, rough chop

  • 1 Large 1 Onion, rough chop

  • 3 Stems 3 Thyme, fresh

  • 1/2 Cup 1/2 Bourbon

  • 1/2 Cup 1/2 Maple syrup

  • 1/2 Cup 1/2 Soy sauce

  • 1 Tbl 1 Espresso instant coffee

  • 24 oz 24 Beef broth

  • Pepper

  • Salt

  • Hash Browns
  • 1 or 2 1 or 2 Russet potatoes, medium size / or 1-12 oz bag of frozen hash browns

  • Bourbon, Maple, Coffee Sauce
  • 2 Cups 2 Braising liquid

  • 1 Cup 1 Maple syrup

  • 1 1/2 Cup 1 1/2 Bourbon

  • 1 Cup 1 Soy sauce, low sodium

  • 2 Tbl 2 Instant Espresso coffee

  • 1/2 Cup 1/2 Lemon juice

  • Optional Side: Sautéed Onions
  • 2 2 Sweet onions

Directions

  • Set oven to 225°
  • Add some butter and oil to your cast iron or enameled Dutch oven. Add your short ribs to the pan and brown the meat over medium-high heat. Do not crowd the pan in order to not steam the meat on the stove. We want to achieve a nice crusty sear.
  • Pull out the ribs and set them aside. Reduce heat to medium-low. Add tomato paste into pan and stir. Add one cup of broth to the pan and stir. Make sure to scrape all the brown bits that are stuck to your pan. That’s all good flavor!
  • Add onions, celery, and carrots into pan and stir.
  • Add remaining braising ingredients to the Dutch oven and stir (except for broth).
  • Add short ribs to the pan. Add enough broth to come up to 1/2 the side of the meat. We are not making a stew so the liquid should not go over the top of the meat.
  • Let the pot come to a simmer. Place your top on the Dutch oven and then set your pot into the oven at 225°.
  • Check your pot every 1/2 hour. Do not let your liquid boil. If your liquid is evaporating too much, turn the heat down and add more broth. Taste the braising liquid to make sure the level of salt and pepper is to your taste. If you need more salt add a little more soy sauce.
  • Pull pot out of the oven after 2 1/2 hours or when the meat is fork-tender.
  • Make your Bourbon, Maple, Coffee Sauce. (See below)
  • Bourbon, Maple, Coffee Sauce
  • Add all sauce ingredients into a saucepan. Turn heat to medium.
  • Reduce the sauce to half. Turn heat to low to keep warm for serving.
  • Hash Browns
  • Take your russet potatoes and run them through a food processor to shred or use a box shredder.
  • Place potatoes in a towel and squeeze out all the water to get the potatoes as dry as you can. Drizzle in some salt and pepper to the shredded potatoes.
  • Set up your waffle maker per the machine’s directions. Add potatoes to the waffle maker and give the waffle maker a little extra press down to ensure you get those nice little square holes that all waffles have. Set waffles aside and place in the oven under low heat to keep until ready to serve.
  • Finishing Steps
  • Take some of your braised ribs and place into a sauté pan. Take some of the sauce and glaze your short ribs.
  • Plate your hash brown waffle; top your waffle off with the glazed short ribs and some of your sautéed onions. Enjoy!!
