Another Look At Chicken Nuggets…

My son Conor is a big fan of chicken nuggets. But how many times do you do a fried-type of nugget and tell yourself, there must be something more! Maybe something a little more healthy and maybe fewer carbs.

How about a Jamaican Jerk Chicken Nugget? I always look at what supplies, condiments, sauces do I have in the cabinet that I haven’t used in a while and Jerk seasoning came to my attention. There’s lots of seasoning out there. This is what I used.

The great thing is, that with leftover chicken nuggets, more ideas came to mind. How about Jerk Chicken Nachos…Jerk Chicken Egg Rolls.

Jerk Chicken Nuggets

Basic Recipe for Jamaican Jerk Chicken Nuggets

Ingredients

  • 4 chicken breast

  • 4 Tbl Jerk seasoning powder

  • 4 Tbl Jerk seasoning paste

  • Drizzle of honey (your favorite)

  • 4 Tbl Garlic chives, minced

  • Drizzle of olive oil

Directions

  • Cut chicken breasts into 1-inch dice and add to medium size bowl.
  • Mix jerk seasoning into chicken and mix. We want to add only enough seasoning to coat chicken
  • Mix in jerk paste till all nuggets are coated. Let chicken marinate for an hour.
  • Heat up a cast iron pan till medium hot. Add a quick drizzle of olive oil. Pour in marinated chicken.
  • Give the chicken a quick mix.
  • Let chicken sit on hot pan to get a nice crust. After a few minutes give chicken another quick mix. Add a little drizzle of honey. Let chicken sit for another few minutes then pull from heat.
  • Check to see if chicken is cooked. (That means taste one to make sure its cooked. I know you want to!)
  • Enjoy!!
