Apparently, the big food fad is a new way to make a quesadilla. I like quesadillas; they are fast and easy to make and can be made for any meal of the day. This “new” Tik Tok version that has been moving through the internet involves putting ingredients into the 4 quadrants of a tortilla. You then flip them onto themselves until everything is layered onto one quadrant.
This dish is perfect for those families that have lots of leftovers. Since I always have leftovers, and I like to experiment, it was time to make my own version. This is a great chance to get the kids involved in the kitchen due to so many options and possibilities. Let them pick their own ingredients. You want lunch, throw in some turkey, cheese, mayo, lettuce, and tomato. Maybe a light dinner with some Mexican flair; leftover carne asada, Oaxaca cheese, refried beans, pickled red onions, and some jalapenos.
What Kind of Quesadilla Should I Do?
I decided on a breakfast quesadilla; smoked guanciale, scrambled eggs, sautéed mushrooms, green onions, and shredded jack cheese. (Just a thought…for those on special diets, any type of tortilla will work…low or no carb, spinach, egg. Use your favorite). Is this method better than the typical method of making a quesadilla that we have been making for years? Not sure, but it is fun to make. I do like the way all ingredients are segregated. When you finally take a bite, you are getting a little bit of everything!

After your quesadilla is all wrapped up, put it in a panini press or toast on top of your stove. Let all your cheese get nice and melty, the pull it off the heat.

NOTE: You really need to try guanciale. It is a cured meat that is produced from pork jowl or cheeks. My buddy Alex turned me on to some and I needed to try it out. What an awesome product. I cooked it like I would any bacon product and it turned out great! It will be some of the best bacon you have ever tasted.
