I have been passing by these very ripe bananas on my kitchen counter for the past week. I decided not to let those bananas go to waste! Today, I am making banana bread! Most of the ingredients can be found in your pantry. I decided to try something different; the decision was whether I should add chocolate chips or peanut butter chips to my bread. There is nothing wrong with making a traditional banana bread. It goes great with your morning coffee! Don’t feel you need any optional ingredients. Today I was feeling that I needed to add a little something…something!

Peanut butter chips won out! What a great way to enhance the best banana bread recipe my family could ask for. That won’t stop me from adding chocolate chips to my next batch with the peanut butter chips. Making banana bread is not a hard recipe. Feel free to add or subtract optional items as you wish.
Tips
Just a couple of things to watch out for. Your bread might get a little dark. I enjoy the crispy bits on the outside, but if your bread is getting too dark, you should lightly top your bread in foil. Use the old trick of sticking a toothpick in the middle of the bread to test whether your bread is done. Your bread is done if the toothpick comes out clean.
Can I Freeze Ripe Bananas?
During the holidays you might like to hand out your Famous Banana Bread to your family and friends. Go ahead and freeze your ripe bananas until you are ready to make your bread. Peel the ripe bananas and vacuum seal them or place them in a zip lock bag. They will be good in the freezer for 3 to 4 months.
