Pavlova Roll With Mixed Berries

Why does my mouth start watering just by saying the name of this dessert? No, this dessert was not named after that famous psychiatrist, Pavlov, who did experiments to get his dogs stomachs to react after hearing a sound. But that doesn’t mean my stomach won’t react, because this is one amazing combination of berries, whipped cream rolled in a crunchy meringue! Perfect for the summer. This dessert won’t hold it’s crunch long, so you should eat it fairly quickly. I expect that won’t be a problem!

Pavlova Roll With Mixed Berries

Simple dessert with meringue, whipped cream and fresh berries! Yum!

Ingredients

  • Meringue
  • 6 large eggs, just the whites

  • 1 pinch of salt

  • 14 tbl of superfine (caster) sugar

  • 1 1/2 tsp cornstarch

  • 2 tsp white wine vinegar

  • 1/2 tsp of vanilla extract

  • Filling
  • 10 oz heavy cream

  • 1 tbl brandy

  • 1 tbl powdered sugar

  • 14 oz of mixed berries

  • Sauce
  • Mixed berries

  • 1/4 cup simple syrup

  • Garnish
  • Mixed berries

  • Whipped cream

  • Powdered sugar

  • Chopped mint

Directions

  • Meringue
  • Set oven to 325°. Add a little oil to the bottom of a 9 X13 Swiss Roll Pan. Place a piece of parchment paper on top of pan.
  • Whisk egg whites and salt until soft peaks. Beat into egg whites 1/2 superfine sugar, a little at a time.
  • Fold in remaining superfine sugar, corn starch, vinegar, and vanilla
  • Spread mixture in the prepared Swiss Roll Pan
  • Bake in in the oven for 20 minutes
  • Turn the pan around and bake for another 15 minutes or until you get a little color. Turn oven off and leave in oven until cool.
  • Filing and Assembly
  • Whisk cream until thickened; add sugar and brandy and continue to whisk until stiff peaks.
  • Place a piece of parchment paper on a baking screen and sprinkle with superfine sugar.
  • Carefully flip meringue onto parchment paper and baking screen.
  • Carefully pull off the parchment paper that was previously on the bottom the pan.
  • Spread on whipped cream and add a light amount of mixed berries over 2/3 of the roll
  • Grabbing the long edge of the parchment paper and start to roll the meringue like you would a jelly roll or sushi roll.
  • Put rolled Pavlova on serving plate; sprinkle roll with powdered sugar and add fresh berries to the plate and on top of roll.
  • Cut a slice off the roll and place on individual serving dish. Garnish with chopped mint, more berries and add some sauce as desired.
  • Enjoy!
  • Sauce
  • Add simple syrup and mixed berries into a sauce pan. Over medium heat stir syrup and berries until they lightly break down.
  • Another option is to add berries and some sugar to a mixing bowl to “macerate” the berries. (See note below.)

Notes

  • Macerating is the process of breaking the fruit down by sprinkling the fruit with sugar which will help draw liquid out of the berries. This “syrup” of the liquid and the broken down berries can be poured over your slices of pavlova.
