Northern Bean Soup

It’s cold outside…the rain is coming. I see a soup day in my future! This recipe is so comforting, the whole family will find themselves in a wonderful food coma afterward which is not that bad especially in these crazy Covid – 19 times!

Northern Bean Soup

Ingredients

  • 1 pound Great Northern Beans

  • 1 Tbl olive oil

  • 8 oz diced ham

  • 8 oz diced kielbasa

  • 1 medium onion, diced

  • 1 medium carrot, diced

  • 2 Tbl Dijon mustard

  • 2 tsp oregano, dry

  • 2 tsp thyme, dry

  • 2 cloves garlic, minced

  • Rosemary, 1 sprig

  • 1 bay leaf

  • 64 oz vegetable or chicken stock

  • Spinach / Kale

  • Garnish
  • Crispy fried onions and shredded parmesan cheese.

Directions

  • There is no need to pre-soak the beans, but if you would like, place beans in a large bowl of water. Soak 3 hours up to overnight.
  • Add olive oil to saute pan
  • Saute kielbasa and ham till you get some caramelization. Add vegetables and mustard to pan and cook for an additional 10 minutes. Add all remaining spices/ingredients except for spinach/kale to pan and cook for an additional 5 minutes. When cooking complete, add all to pressure cooker.
  • Add beans and chicken stock to your pressure cooker/insta-pot.
  • Set pressure cooker to High and set time for 40 minutes.
  • When cook is complete, do not use the “quick” release. Let the pressure reduce naturally. You should be able to open the lid within 10/15 minutes.
  • Open the lid and pull out bay leave and sprig of rosemary. If beans are not soft and creamy to your liking, reset the pressure for another 5 to 10 minutes.
  • Add kale/spinach and let sit in the pot until it wilts to the texture you desire.
  • You can garnish with some crunchy fried onions and parmesan cheese on top and serve with some crusty bread for a very satisfying meal for a cold night!
  • Enjoy!

Notes

  • Some people believe they need to soak their beans overnight to relieve any possibility of having any “digestive” problems. The beans cook great in the pressure cooker and I noticed no difference. But then again, my stomach is pretty indestructible!
