I definitely was interested when I heard about the Temecula chefs that were putting on a pop-up dinner at the Akash Winery in Temecula Wine Country. Dylan Soros, from Soro’s Mediterranean Grill, and Daniel Johnson, from the Naughty Pig Butchery, were showcasing their cuisine. So when two of the premier chefs in the Temecula Valley say they are putting on a “Mystery Dinner”, you have me intrigued. In addition, pairing some great Akash wine with the Chef’s dishes certainly helped to make it a successful night.
Let’s talk about the food. What better way to start off than with an amuse-bouche. (I could have eaten a 100 of them)
Chef’s Collaboration
Bluefin Toro, Ponzu, Garlic Chip, Caviar, and Japanese A5 Ribeye Wagyu Tataki, Creme Fraiche, Caviar
1st Course: From Chef Dylan
Scallop Sashimi, Leche de Tigre version of an Aguachile, Black Garlic, Strawberry, Pickled Fresno, Micro Cilantro
2nd Course: From Chef Daniel
Grilled lobster tail, Shaved Fennel and Grapefruit Salad, Spotlight Rose Anglaise
3rd Course: From Chef Daniel
Squab breast, Rillettes, Mustard, Butternut Squash, Haricot Verts, and Sun-Dried Cherry Jus
4th Course: From Chef Dylan
Braised Short Rib, Puebla-Style Mole, Pickled Red Onion, Parsnip Chips, Micro Cilantro
5th Course: Chefs Collaboration
Pear Fritter, Pear Mousse, Miso Caramel
Some of the outstanding wines that were paired with tonight’s dishes were the Akash Sauvignon Blanc, Cabernet Sauvignon, and Three’s Company (A blend of Cabernet Sauvignon, Zinfandel, and Petite Sirah).
