You have an extra day this weekend before you have to go back to work and you have family and friends who have nothing to do. Add some BBQ like a BBQ Rib Sandwich to the mix and you have the perfect combination! I love any opportunity I can get to use my smoker. I do have some friends that are not that crazy about messing up their hands and face with BBQ sauce. Don’t let that deter you. Do what I do; have racks of ribs available for those that like to get down and dirty. (That’s why we have soap, water, and paper towels in the house!) And for those that don’t want to have such a close connection to their food but still enjoy the taste, you can make a BBQ rib plate or a sandwich without the bones.
Make that Boneless Rib Sandwich
The hell you say! I am not talking about the “rib sandwich” you can sometimes find under the Golden Arches. But a version that you can cook from out of your smoker. The key is just cooking your ribs just a little different than what you may be doing right now. Many BBQ cooks will follow the “3-2-1” method of cooking BBQ ribs. Smoke for 3 hours, wrap your ribs in foil for two hours, then back to the smoker for maybe another hour, and then finish off on the grill. The hours may change based on how you like the texture of your ribs and the temperature of your smoker/BBQ.

Now that you know it can be done, fix your ribs using your favorite method. At some point, you have to wrap your ribs in foil. Add some more of your rib rub spice and maybe a little apple juice or apple cider to the wrap and steam those ribs just to the point that you can wiggle those bones right out. Now finish those racks off on the grill with your favorite BBQ sauce and get them nice and crusty.
Cut the ribs up so that they will fit on a toasted onion roll. Add some pickle slices and some chopped white onion and you will have some happy people! And if you don’t want quite that much bread, take some of that onion roll and make toasted croutons with it. Add those croutons to some chopped-up rib bites, chopped onion, and pickles and you have a plate of BBQ goodness! If you want to grill those white onions you will get no complaints from me.
