It’s a Pizza Cheat Day! Let’s Use Tortillas! What??

Just another hot day on my COVID-19 watch. T.G.I.S. (Thank God It’s Someday!)

I don’t know about you, but I always have extra tortillas sitting in my pantry. I have done my wraps, tacos, enchiladas. What about pizza? Making pizza from tortillas? Quick and easy. No dough to deal with. A perfect, what’s in your pantry meal! So it’s definitely a cheat day! But it’s not that bad a cheat day, because my tortillas are low carb. They are 4 to 6 net carbs, depending on the size and brand; which makes them Keto-friendly. Woooohooo!!

Low Carb Tortilla

So what kind of pizza should I make? Being a sometimes indecisive individual, I decide to make 3 different ones. Let’s do a variety! I decide to make a Mexican Chorizo Pizza, an Italian Sub Pizza, and a standard Italian Sausage and Mushroom Pizza. Why you ask, those three? Just clearing my pantry and those are the tastes that I have been craving. Some spicy Mexican, an Italian sub, and a sausage pizza. Let’s take care of all my cravings in one fell swoop!

Let’s make it easy to decide what kind of sauce to use on our tortilla pizzas; Favorite Italian red sauce on the sausage and mushroom pizza, Favorite Italian dressing on the Italian Sub pizza (see here for my favorite Italian Vinaigarette), and of course a good salsa on the Chorizo pizza.

Ingredients

  • Sausage and Mushroom Pizza
  • 1 1 Burrito size flour tortilla

  • 1 1 Italian sausage links (spicy or mild)

  • 1 cup 1 Mushrooms, sliced

  • 1-2 cup(s) 1-2 Mozzarella cheese, shredded

  • 1 to 2 cups 1 to 2 Passata

  • Sprinkle Sprinkle Powdered Garlic

  • Sprinkle Sprinkle Dry Oregano

  • Sprinkle Sprinkle Red pepper flakes

  • 3 3 Basil leaves (optional, thin slices)

  • Italian Sub Pizza
  • 1 1 Burrito size flour tortilla

  • 1 slice each 1 Mixed Italian deli meat (Soppressata, Ham, Mortadella, Capicola, or your favorite), diced.

  • 3 slices 3 Provolone, thin sliced

  • 1 cup 1 Pepperoncini or Banana peppers, thin slices

  • 2-4 Tbl 2-4 Favorite Italian Dressing

  • 1/2 Large 1/2 Tomato, small dice

  • 1 to 2 cup(s) 1 to 2 Mozzarella, shredded

  • 3 3 Basil leaves (optional, thin slices)

  • Chorizo and Green Chile Pizza
  • 1 lb 1 Favorite Brand of Chorizo

  • 1 4 oz can 1 Chopped green (Hatch) chiles

  • 1-2 cup(s) 1-2 Oaxaca, or Chihuahua cheese

  • 1 large 1 Green onion, sliced on the bias

  • 1 to 2 cups 1 to 2 Favorite salsa

Directions

  • Directions Sausage and Mushroom Pizza
  • Chiffonade/thin slice your basil and set aside.
  • Crumble up your sausage, or cut into little round circles. (Your option) and place in a saute pan. Cook sausage over medium heat. Add sliced mushroom. Cook both until nicely browned. Set aside after cooked.
  • Heat up you cast iron pan over medium heat. Place your tortilla in the pan and slightly brown both sides. Should be a couple of minutes each side. Take the pan off the heat.
  • Spread the passata over the tortilla. (Leave tortilla in pan)
  • Sprinkle shredded mozzarella over tortilla.
  • Add sliced sausage and mushrooms over tortilla.
  • Sprinkle garlic, red pepper flakes, and oregano over tortilla.
  • Place pan under broiler to melt the cheese till nicely browned. Slice and serve!
  • Directions Italian Sub Pizza
  • Dice your Italian deli meats and slightly brown in a saute pan over medium heat.
  • Heat up your tortilla as in the previous recipe. Spread chopped deli meat over the tortilla
  • Add a couple of slices of provolone on top of the browned deli meats.
  • Top off pizza with sliced mozzarella, chopped tomatoes, and sliced pepperoncinis. Drizzle Italian dressing on top of pizza
  • Place pizza under broiler to slightly melt the cheese.
  • Slice and serve!
  • Directions Chorizo and Green Chile Pizza
  • Brown the chorizo over medium heat; drain the fat and set aside. Brown tortilla as in the previous recipe.
  • Place tortilla in the pan; spread salsa on the bottom of the tortilla.
  • Add green chile and chorizo over the pizza.
  • Spread cheese over pizza. Sprinkle green onion over the pizza.
  • Place pan in the oven until cheese has melted and nicely browned.
  • Slice and serve!
