Italian Chopped Salad

Back to another day on my COVID-19 watch. T.G.I.S. (Thank God It’s Someday!)

I don’t know about you, but in the heat of summer, I’m not really in the mood to sit outside in 90° weather due to restaurant restrictions so, all I crave is a great salad. One of my all-time favorites is the Italian Chopped Salad. The ingredients can be very similar to an antipasto, but for this salad, all ingredients are chopped into small bites.

Various Italian Cured Meats and Cheese

All you need is some of your favorite Italian cured meats and cheeses that you might use when you put together a charcuterie board and you are halfway there to a great salad. (check here for my version of a charcuterie board)

Homemade dressings are so easy to make. Why go out and spend money when you probably have all the ingredients in your pantry. Use my perfect version of an Italian Red Wine Vinaigrette and you will be set up to enjoy the best-chopped salad you have ever had! Make it easy on yourself during these hot and crazy times!

Italian Chopped Salad

Ingredients

  • Italian Red Wine Vinaigrette
  • 1/4 cup Olive oil

  • 3/4 cup Grapeseed oil

  • 3/4 cup Red wine vinegar

  • 2 tsp Dried oregano

  • 1/2 tsp Salt

  • 1/4 tsp Red pepper, crushed

  • 1/2 tsp Black pepper

  • 1/2 tsp Garlic powder

  • Salad Ingredients
  • 1 head Romaine lettuce, chopped

  • 2 Slices Sopressata, chopped

  • 2 Slices Mortadella, chopped

  • 2 Slices Prosciutto (or favorite deli ham), chopped

  • 2 Slices Genoa salami, chopped

  • 2 Slices Capicola, chopped

  • 2 Slices Provolone

  • 1/2 cup Pepperoncini, thinly sliced (optional)

  • 4 oz Cherry tomatoes, sliced in half (optional)

Directions

  • Dressing
  • Whisk all dressing ingredients into a bowl and pour it into a glass dressing jar.
  • Assemble Your Salad
  • Wash and rinse your romaine. Cut in half length-wise. Cut again into 2 inch slices. Add to your salad bowl.
  • Cut your deli meats and cheese into small cubes and add to your bowl.
  • Add your pepperoncinis and tomatoes to your bowl if desired.
  • Mix salad ingredients well. Add your dressing to your salad bowl and stir once more.
  • Sit down with your fresh chopped salad, a nice glass of wine, and enjoy! Some garlic bread topped with parmesan cheese wouldn’t hurt either!

Notes

  • There are so many different deli/cured meats and cheeses, Italian or other that you can use for this type of salad. Experiment and find the perfect meats that fit your tastes!
