Fast Breakfast with a Baked Avocado and Egg…….

Hearing so much about the benefits of eating avocados and having them for breakfast, I decided today was the day.

I took an individual serving cast iron pot and added a small amount of salsa to the bottom of the pot.

I cut the avocado in half; took out the pit and placed the avocado in the little pot. Sprinkled a little salt and pepper on top of the avocado. Gently cracked the egg and added to the avocado. If you think there is not enough room in the avocado, just scoop a little of it out. Added some bacon pieces that I previously cooked to the pot.

Sprinkle whatever seasoning you’re feeling at the time; cajun, tandori seasoning, togarashi, tajin, or just your basic season salt. Sprinkle with your favorite hot sauce! Experiment!

Put your avocado in the oven and roast it for 15 minutes. Turn on the broiler and cook till egg is to your liking if it is still to soft for you. I happen to like my egg soft, so for me, I like the ooze. Time to eat! Enjoy!

Mix that soft egg and avocado up and you have a very healthy and tasty meal! If you are not doing keto or watching your carbs, take out a spoonful and spread on a piece of toast or bagel!
