Cool Off With a Fresh Cucumber Salad!

Another HOT COVID Day! T.G.I.S. (Thank God It’s Someday!)

Not only do we have to deal with COVID issues, but we also have to deal with crazy heat!

This light and easy salad is the perfect dish that can be made at the last minute. You’ll notice that the ingredients include English Cucumbers. The reason for this is that the English Cucumber is perfect for salads in that they have less water and seeds. You will need to salt the cucumbers and wait a short time while the salt helps to pull out some of the water in the cucumbers.

If you feel you need more “stuff” in this salad; how about adding some feta cheese, a dash of oregano, and Kalamata olives to make this dish more Mediterranean!

Now you can enjoy a salad that after you eat, you won’t feel like you have to take a nap!

Nice light side salad for your poolside BBQ!

Ingredients

  • 2 English Cucumbers, peeled and thinly sliced 1/2 inch

  • 10 oz Grape tomatoes, sliced in half

  • 1 Tbl Salt

  • 1/2 cup Pickled purple onions

  • 4 Tbl Rice vinegar or red wine vinegar (1/2 to be used for pickling purple onion

  • 2 Green onions, thinly sliced on the bias

  • 2 tsp Sesame oil

  • 1/4 tsp Sugar

  • 1 tsp Togarashi (Japanese seasoning found in most markets-you can use red pepper flakes if not available

Directions

  • Salt the cucumbers and let sit in a colander for about 45 minutes so that they can release some of their water. We still want the cucumbers to have some crispness to their texture.
  • Chop up a small purple onion and add 1/2 the vinegar. Let sit for 2 hours for a quick pickle.
  • Whisk together 1/2 the vinegar, sesame oil, sugar, and togarashi / red pepper flakes
  • Rinse the cucumbers under cold water and pat dry. Add the cucumbers, tomatoes, green onions to a bowl and toss with the dressing.
    Enjoy!

Notes

  • If you still want this as a dinner and need some protein, add some grilled chicken, feta cheese, and Kalamata olives to make this dish more Mediterranean.
