Just another COVID-19 Day…T.G.I.S. (Thank God It’s Someday!)

What to do? What to do? Today is another Someday on our path through this COVID-19 “stuff”. My “family” needs wine and of course food! Weather-wise, it looks as if it is going to be a pretty nice day. It was time to do my own charcuterie and cheese board for an all-day nosh!

First the cheese! I like variety; hot and spicy pepper jack…full of funk Stilton…mild and creamy goat cheese…smoked mozzarella. Oh my! I am a big fan of pate also. It seems perfect for a day of munching.

Now when talking about cured meats we are all limited by our local delis. I just happen to have a great one Campinis in Temecula. So many varieties of salamis, cured meats, ham, and prosciutto. It’s hard not to buy a little of everything. Whether your tastes are for spicy or mild; they have it all. Think of it this way; whatever is leftover becomes sandwiches, part of pasta sauce, or processed as I did with my nduja. Check here for my recipe!

Now we need some add on’s…crackers, pickles, olives, bell peppers, fruits, and nuts; whatever hits your fancy! You are now ready to do a marathon watch of all the Star Wars movies. Or sit by your pool with a glass of wine (if you are lucky to be by one during this crazy time).
