Best Fajitas and Fajitas Seasoning Ever!

Has your mouth started watering yet? It’s hard not to react when that hot sizzling plate of fajitas passes your table with the smells from the grilled meats and veggies enticing you to pay attention! My standard is a carnitas burrito or plate. I love when the carnitas is a little crispy. So good! Check out my carnitas recipe here!

As much as I like carnitas, it’s nice to change it up and indulge in the best fajitas ever! Sprinkle the veggies and shrimp with my special fajitas seasoning for a healthy change of pace. The recipe for the fajitas seasoning is more than enough for what you will need in this recipe. That means you will have some seasoning left over for the next time you need to add a little something-something to one of your dishes. Best Fajitas and Seasoning

Ingredients

  • 2 lbs 2 Favorite protein; Skirt steak, chicken, or shrimp

  • 1 Red 1 Bell Pepper

  • 1 Yellow 1 Bell Pepper

  • 1 Green 1 Bell Pepper

  • 1 1 Onion, sliced

  • 3 or 4 3 or 4 Green onion

  • Flour or corn tortillas

  • Garnishes and Side Dishes (Optional)
  • Pico de gallo

  • Sour cream

  • Cilantro

  • Limes, quartered

  • Mexican Rice (Check out my recipe here)

  • Fajitas Seasoning
  • 2 Tbl 2 Ancho and Guajillo chile powder

  • 1 tsp 1 Cayenne powder

  • 1 Tbl 1 Cumin

  • 1 Tbl 1 Paprika, smoked or sweet

  • 2 tsp 2 Garlic powder

  • 2 tsp 2 Onion powder

  • 2 tsp 2 Mexican oregano

  • 2 tsp 2 Salt

  • 2 tsp 2 Black pepper

Directions

  • Preheat oven to 350°
  • Slice your veggies and set them aside.
  • Peel and devein the shrimp and set them aside.
  • Place veggies in a bowl. Sprinkle a little oil over the veggies. Sprinkle seasoning over veggies. Toss and mix well. Place veggies in a baking tray.
  • Place the tray of veggies into the oven. Cook until tender.
  • Place shrimp into a bowl. Cover the shrimp with seasoning and mix well.
  • Add shrimp to the tray once veggies are cooked till tender.
  • Turn heat to broil and cook the shrimp until barely pink. Flip all the shrimp to the other side to finish cooking. Do not overcook. Shrimps will cook fast.
  • Pull tray from the oven when all is cooked. Taste to see if you need additional seasoning.
  • Note: You may want to have a little more control when cooking the shrimp. Another option would be to season the shrimp. Add some oil or butter to a very hot cast iron pan and cook for just a couple of minutes.
  • Fajita Seasoning
  • Place all spices into a bowl and mix well. Add more salt to taste if needed. (You will have extra seasoning left over to use in more dishes.)
  • Assemble your Dish
  • Heat up a cast-iron serving plate and load it up with veggies and your protein. Grab some tortillas that you have preheated. Assemble a large tortilla with your favorite garnishes and your fajitas. Enjoy!!
