Broccoli Beef at It’s Best!

Just another day on my COVID-19 watch. T.G.I.S. (Thank God It’s Someday!)

If you are looking for a simple meal involving a green vegetable and a protein, go for broccoli and beef! All vegetarian, you ask? Substitute some tofu or just add more or different veggies. You want chicken or pork? Make the change! Add rice or your favorite noodle to make it complete. Using cauliflower rice will keep your dish Keto Friendly.

Broccoli Beef at It’s Best!

Ingredients

  • 1 lb 1 Flank or Sirloin

  • 2 Tbl 2 Vegetable oil

  • 5 cups 5 Broccoli tops, blanched

  • 1 – 2 1 – 2 Green onions, sliced on the bias (optional)

  • Marinade
  • 1 1/2 Tbl 1 1/2 Tamari or soy sauce

  • 1/2 Tbl 1/2 Rice wine vinegar

  • 1/2 Tbl 1/2 Shaoxing wine, or dry sherry

  • Sauce Base
  • 4 Tbl 4 Beef broth

  • 3 Tbl 3 Oyster sauce

  • 3 Tbl 3 Tamari sauce, or soy

  • 2 Tbl 2 Garlic

  • 1 tsp 1 Fresh ginger, or ground

  • 1 Tbl 1 Rice wine vinegar

  • 2 Tbl 2 Shaoxing wine, or dry sherry

  • 1 Tbl 1 Brown sugar

  • 2 Tbl 2 Cornstarch

  • 1 tsp 1 Sesame oil

  • 1/2 tsp 1/2 White pepper

  • 1 Tbl 1 Sambal, or 2 tsp red pepper flakes

Directions

  • Cut thinly your steak into 1-inch strips against the grain and place into a zip-lock bag.
  • Add marinade to zip-lock bag and let the meat marinate for 1 hour
  • Bring to a boil a pot of water. Add broccoli to pot and cook until broccoli tops turn green. It should be less than a minute.
  • Take broccoli off the heat and drain the broccoli in a colander.
  • Add oil to large skillet over medium high heat. Layer the beef in the pan so as not to steam the meat. Cook in batches if necessary. Hold off stirring the beef for 1 or 2 minutes so that you can get a good color to the beef.
  • Pull the beef off and set aside in a separate bowl.
  • Pour your sauce base into the pan and reduce until it starts to thicken.
  • Add your beef and broccoli back into the skillet and toss with the sauce. Pull off the heat. Plate and garnish with some green onions and serve!
  • Enjoy!!

Notes

  • I added some shiitake mushrooms to my dish. I am a big fan of mushrooms and tend to add them whenever possible. Just broccoli and mushrooms would make a great vegetarian dish!
